Seed Oils: The Fat That Replaced Real Food (And What It's Doing to Your Metabolism)

For thousands of years, humans cooked with butter, tallow, lard, and olive oil. In less than a century, we replaced them all. And we were told it was for our health.

There is a bottle of vegetable oil in nearly every American kitchen.

Canola oil. Soybean oil. Corn oil. Sunflower oil. Cottonseed oil.

It sits on the counter or in the pantry, often labeled heart-healthy, often chosen deliberately by women who are trying to do the right thing for their families.

It is in the salad dressing.
In the crackers.
In the granola bars.
In the restaurant meal that seems like a reasonable choice.
In the baby food. The protein bars. The "natural" chips. The organic mayonnaise.

It is, without exaggeration, in nearly every processed food and restaurant meal consumed in America today.

And the story of how it got there — who funded the science that promoted it, what happens to it before it reaches your pan, and what the research is increasingly showing about what it does inside the body — is one of the most important chapters in the food system story we have been tracing all month.

Let's tell it.

📜 A Brief History of Fat — And How We Got Here

For the vast majority of human history, people cooked with the fats that were naturally available to them.

Animal fats — butter, lard, tallow, schmaltz — rendered from the animals they raised.

Plant fats that required minimal processing — olive oil pressed from olives, coconut oil from coconuts, small amounts of sesame oil in certain cultures.

These fats were stable at cooking temperatures. They did not oxidize readily. They contained fat-soluble vitamins — A, D, E, K — that the body requires and that cannot be obtained through low-fat or fat-free eating. And they had coexisted with human metabolism for millennia without producing the cardiovascular epidemic we are currently living in.

Then came the early 20th century. And the industrial food system. And a confluence of agricultural surplus, processing technology, and eventually — crucially — the nutrition science we have already traced in this series.

Cottonseed oil — originally a waste product of cotton production with no culinary tradition and no history of human consumption — was the first industrial seed oil to enter the American food supply, in the early 1900s, when Procter & Gamble discovered it could be hydrogenated into a solid white fat that resembled lard.

They named it Crisco.

They hired home economists to distribute free cookbooks featuring Crisco recipes. They ran full-page advertisements claiming it was "cleaner" and "more digestible" than lard. They positioned an industrially processed cotton byproduct as superior to the animal fat that generations of grandmothers had cooked with.

It worked.

By mid-century, industrial seed oils — extracted from soybeans, corn, cottonseed, canola, and sunflower seeds — had become the dominant cooking and food production fats in America.

And then Ancel Keys happened.

When his Seven Countries Study — cherry-picked, industry-influenced, and ultimately wrong — made saturated fat the villain of heart disease, the remaining cultural attachment to butter, lard, and tallow collapsed.

Saturated fat was out.

Polyunsaturated vegetable oils — the seed oils — were positioned as the heart-healthy replacement.

The American Heart Association, whose funding relationships with the vegetable oil industry were extensive and well-documented, endorsed them enthusiastically.

And a dietary shift that had begun as industrial convenience became official health policy.

🔬 What Seed Oils Actually Are — And How They're Made

This is the part that most people have never seen. And once you see it, you cannot unsee it.

Seed oils are not pressed from seeds the way olive oil is pressed from olives.

They are extracted through a highly industrial process that looks nothing like food production.

Here is what happens to a soybean — or a canola seed, or a corn kernel — before it becomes the oil in your bottle:

Step 1: High-heat mechanical pressing. The seeds are heated to high temperatures and mechanically pressed. Heat begins oxidizing the delicate polyunsaturated fats almost immediately.

Step 2: Chemical solvent extraction. The remaining oil is extracted using hexane — a petroleum-derived solvent, a component of gasoline. Hexane is highly effective at pulling the remaining oil from the seed material.

Step 3: Degumming. The crude oil is treated with water or acid to remove phospholipids.

Step 4: Neutralization. The oil is treated with sodium hydroxide — lye — to remove free fatty acids.

Step 5: Bleaching. The oil is filtered through bleaching clays to remove color pigments — and, along with them, whatever antioxidants survived the previous steps.

Step 6: Deodorization. The oil — at this point rancid from the heat and chemical processing — has a foul smell that would make it completely unpalatable. It is steam-distilled at extremely high temperatures (over 400°F in some cases) to remove the odor.

The result is a clear, odorless, flavorless liquid that the body has no evolutionary history with, that has been stripped of every natural protective compound it originally contained, and that is — at the molecular level — already significantly oxidized before it ever reaches your kitchen.

This is what is labeled heart-healthy on the grocery store shelf.

⚡ The Omega-6 Problem

Here is the metabolic mechanism that connects seed oils most directly to the inflammation and insulin resistance at the center of everything we discuss:

Seed oils are extraordinarily high in omega-6 polyunsaturated fatty acids — primarily linoleic acid.

Omega-6 and omega-3 fatty acids are both essential — meaning the body cannot make them and must obtain them from food. They compete for the same enzymes in the body. And the ratio between them matters enormously for inflammatory balance.

In the traditional human diet — before industrial seed oils — the ratio of omega-6 to omega-3 fatty acids was estimated at roughly 4:1 or lower.

In the modern American diet, dominated by seed oils in nearly every processed food and restaurant meal, that ratio has shifted to somewhere between 15:1 and 25:1.

This is not a small change.

Omega-6 fatty acids — particularly linoleic acid in excess — are metabolic precursors to inflammatory signaling molecules called arachidonic acid-derived eicosanoids. When omega-6 intake is chronically and dramatically disproportionate to omega-3 intake, the body's inflammatory signaling tips decisively toward the pro-inflammatory state.

Chronic, low-grade systemic inflammation.

The same inflammation that drives insulin resistance.

That drives cardiovascular disease.

That drives the joint pain, the brain fog, the mood disruption, the skin inflammation, and the metabolic dysfunction that so many women in midlife are living with and cannot explain.

I want to be honest, as I have been throughout this series: the research on seed oils is not as uniformly settled as the research on, say, trans fats. There is genuine scientific debate about the degree to which linoleic acid itself — versus the oxidized byproducts of industrial processing, or the ultra-processed food context in which seed oils almost always appear — is the primary driver of harm.

What is not debated is the omega-6 to omega-3 ratio shift and its inflammatory consequences. What is not debated is the oxidative instability of polyunsaturated fats at high temperatures. What is not debated is that the replacement of traditional stable fats with industrial seed oils coincided with — not preceded by — the explosion of chronic inflammatory disease in America.

The pattern is consistent. The mechanism is plausible. The direction of the evidence is clear.

🍳 The Cooking Problem — What Happens When You Heat Them

Polyunsaturated fatty acids are chemically unstable.

The double bonds in their molecular structure — the feature that makes them "unsaturated" — are reactive. They oxidize readily when exposed to heat, light, and oxygen.

When seed oils are heated to cooking temperatures, they produce a range of oxidation byproducts — aldehydes, peroxides, and other reactive compounds — that are genuinely toxic to cells in ways that the original fatty acid was not.

Aldehydes generated from heated seed oils have been shown to damage DNA, disrupt mitochondrial function, and contribute to the formation of the advanced glycation end products (AGEs) that accelerate aging and worsen insulin resistance.

Traditional cooking fats — butter, ghee, lard, tallow, coconut oil — are predominantly saturated and monounsaturated fats, which are chemically stable at cooking temperatures. They do not oxidize readily. They do not produce the aldehyde cascade that polyunsaturated seed oils do when heated.

This is not a new observation.

It is basic organic chemistry.

And it was set aside — for decades — in favor of the dietary fat narrative that the seed oil industry and the American Heart Association had successfully established as health policy.

🏭 Where They're Hiding

If you are eating primarily whole foods cooked at home with traditional fats, your seed oil exposure is manageable.

But seed oils are in almost everything that is not a whole food.

At restaurants: The overwhelming majority of restaurants — including those positioned as healthy or upscale — cook with soybean oil or canola oil. It is the cheapest available cooking fat at commercial scale. When you eat out, you are almost certainly consuming seed oils regardless of what is on the menu. This is not a reason to never eat out. It is information worth having.

In packaged foods: Read the ingredient label of almost any packaged food — crackers, chips, granola bars, protein bars, salad dressings, condiments, frozen meals, baked goods, cereals — and you will find canola oil, soybean oil, sunflower oil, safflower oil, or corn oil.

Often more than one.

Often listed as "expeller-pressed" or "high-oleic" — which are marketing qualifiers that sound meaningful but do not change the fundamental chemistry of the oil.

In foods marketed as healthy: This is the one that lands hardest for most women.

The organic crackers. The natural protein bars. The avocado oil chips (read the label carefully — many "avocado oil" chips contain a blend that is primarily canola or sunflower). The "clean eating" frozen meals. The plant-based meat alternatives, which are predominantly seed oil in their fat composition.

🧈 What to Cook With Instead

The replacement of seed oils in your home kitchen is one of the most straightforward and highest-impact dietary changes available.

For high-heat cooking: Butter, ghee (clarified butter), beef tallow, lard from pasture-raised animals, and refined coconut oil are all stable at high temperatures, have long culinary histories, and do not produce the oxidative byproducts of heated seed oils.

For medium-heat cooking: Extra virgin olive oil — the most researched and most consistently protective dietary fat in the literature — is appropriate for medium-heat cooking and is one of the most valuable additions to any metabolically supportive kitchen. Cold-pressed avocado oil is also stable at medium-high heat.

For cold applications: Extra virgin olive oil, cold-pressed flaxseed oil (rich in omega-3), and walnut oil for dressings and finishing.

At restaurants: You cannot always control this — and that is okay. Reducing seed oil at home significantly lowers your overall burden, even when restaurant meals are unavoidable. Order simply. Ask for olive oil and vinegar when available. Choose whole protein and vegetable preparations over dishes with complex sauces or fried components when you want to minimize seed oil exposure.

💛 The Full Picture — What This Month Has Really Been About

We began August in the soil.

We traced what industrial agriculture did to the ground our food grows in, and how the mineral depletion that followed impairs the exact metabolic functions — insulin signaling, mitochondrial energy production, cellular repair — that determine how you feel every day.

We went into the herbicide that is now detectable in most conventional food and in human bodies, that disrupts the gut microbiome through the same antimicrobial mechanism it uses to kill soil bacteria.

We went into the heavy metals in the foods labeled healthy and natural, accumulating quietly in tissue and disrupting the metabolic function that no one connected them to.

And today we close with the fat that replaced real food — industrially processed, chemically extracted, oxidatively unstable, omega-6 dominant, and now present in nearly every meal that does not come from a whole-food home kitchen.

These are not separate stories.

They are the same story.

A food system shaped by industrial interest, marketing disguised as nutrition science, and regulatory frameworks that moved far too slowly to protect the people they were meant to serve.

And a generation of women doing everything they were told — eating the vegetable oil, avoiding the butter, reading the heart-healthy labels — who were not given the information they needed to make genuinely informed choices.
