Heavy Metals in Everyday Foods — What the Processing Pipeline Isn't Telling You

The foods marketed as healthy — the rice cakes, the organic cereals, the energy bars — may be carrying something the label never mentions.

This is the one that stops people.
Not glyphosate, with its complicated chemistry and contested research.
Not soil depletion, with its abstract nutrient percentages.
This one.

The moment when you learn that the rice syrup in the "natural" candy bar may contain arsenic. That the high fructose corn syrup in the processed food your child eats may carry mercury as a byproduct of how it was manufactured. That the foods positioned as wholesome alternatives may be delivering heavy metals at levels that — particularly in children, and in women with compromised detoxification capacity — are worth taking seriously.

I want to be careful here, as I was with glyphosate, to tell you what is established and what is still being studied.

But I also want to be clear: the established evidence here is already significant.

And it has been largely absent from public conversation — for reasons that, by August, should feel very familiar.

⚗️ What Heavy Metals Are — and Why They Matter Metabolically

Heavy metals — arsenic, mercury, lead, cadmium, and others — are naturally occurring elements that at low concentrations are part of the environment. At elevated concentrations, and with chronic ongoing exposure, they are among the most metabolically disruptive substances the human body encounters.

They do not biodegrade.
They accumulate in tissue over time.
They compete with and displace the essential minerals — zinc, selenium, magnesium, iron — that are critical for metabolic function.
They generate oxidative stress that damages mitochondria, the cellular energy-producing structures whose depletion we discussed in the fatigue post.
They disrupt enzyme function throughout the body — including the enzymes involved in glucose metabolism and insulin signaling.

The metabolic consequences of chronic, low-level heavy metal exposure include:

Mitochondrial dysfunction — heavy metals damage the mitochondrial membranes and electron transport chain, directly impairing cellular energy production and producing the profound, cellular fatigue that does not respond to sleep or rest.

Pancreatic beta cell damage — the cells that produce insulin are particularly vulnerable to heavy metal toxicity. Cadmium and arsenic have both been shown to damage beta cell function, impairing insulin secretion and contributing to the kind of progressive insulin dysfunction that looks, on a lab panel, like steadily worsening glucose metabolism without a clear cause.

Increased insulin resistance — multiple studies have found significant associations between arsenic exposure and insulin resistance, independent of other factors. The mechanisms are multiple: oxidative stress impairing insulin signaling, disruption of glucose transporter function, inflammation driven by metal-induced cellular damage.

Thyroid disruption — mercury and cadmium both interfere with thyroid hormone synthesis and receptor function. Given how directly thyroid function influences metabolic rate, energy, and insulin sensitivity, this is a connection that deserves far more attention in the clinical management of women with unexplained metabolic dysfunction.

🍫 Arsenic in Rice Syrup — The Organic Candy Problem

Here is where the story becomes personal in a way that I think will surprise you.

Rice is one of the most efficient accumulators of inorganic arsenic — the more toxic, carcinogenic form — from soil and water. Rice plants take up arsenic through the same biological channels they use to absorb silica, and the arsenic concentrates in the grain itself.

This is well-established and well-documented. The FDA has acknowledged it. Consumer Reports has tested for it. The research is not contested.

Brown rice contains more arsenic than white rice because the arsenic concentrates in the outer bran layer. Rice products — rice flour, rice crackers, rice cakes, rice milk, and rice cereals — concentrate it further through processing.

But the arsenic story doesn't stop at rice.

Rice syrup — often labeled as "brown rice syrup" or "organic brown rice syrup" — is a sweetener derived from brown rice that has become common in products marketed as natural, organic, or health-conscious alternatives to high fructose corn syrup.

Energy bars. Infant formula. Organic cereals. Natural candy and confections (including many candies children love and eat frequently).

A landmark study published in Environmental Health Perspectives found that rice syrup-sweetened products contained arsenic levels significantly above those found in comparable products sweetened with other ingredients — and that infant formula sweetened with rice syrup contained arsenic at levels that, fed to an infant consistently, would exceed safe arsenic intake guidelines.

The products carrying this ingredient were not positioned as industrial junk food.

They were positioned as the healthy choice.

🌽 Mercury in High Fructose Corn Syrup

The mercury story in corn syrup is less about the corn itself and more about the industrial process used to make it.

High fructose corn syrup is manufactured using chlor-alkali processing — an industrial process that historically used mercury cells to produce the caustic soda used in the conversion process. Mercury contamination of the final product was a documented consequence of this manufacturing method.

A study published in Environmental Health in 2009 found mercury in nearly half of the commercial high fructose corn syrup samples tested, and in approximately a third of the processed food products containing it as a listed ingredient.

The food industry responded by noting that many manufacturers had shifted to mercury-free processing methods, and that the levels detected were low. The FDA did not take regulatory action.

What the response did not address was the cumulative picture — the woman or child consuming multiple processed foods daily, each containing small amounts of mercury from syrup manufactured with mercury cells, over years and decades.

Heavy metals accumulate.

Small consistent exposures compound in tissue in ways that single-source risk assessments do not capture.

What the testing data consistently shows:
Children's foods — the products specifically marketed for young children, the products parents choose because they believe they are safe — frequently test positive for arsenic, lead, cadmium, and mercury at levels that independent researchers flag as concerning for neurological and metabolic development.

The same foods that carry health claims on their labels.
The same foods sold in the organic aisle.
The same foods that parents reach for because they are trying to do the right thing.
This is not about individual companies behaving uniquely badly.

It is about a regulatory framework that allows "generally recognized as safe" designations to stand for decades while independent testing accumulates evidence the regulatory agencies have been slow to act on.

And it is about an industry that has every financial incentive to keep those designations in place.

💛 For the Women Who Are Sitting With This

I know this series has been heavy.

I know that learning about soil depletion, and glyphosate, and now heavy metals in the foods you may have been feeding yourself and your family — it carries a weight that is not easy to hold.

I want to say something important before we move forward:
The goal of this information is never panic. It is never guilt.

If you have been eating rice cakes and rice syrup-sweetened energy bars because you were trying to make healthy choices — that is not a failure. That is the exact response that a system designed to confuse you produced.

The labeling said natural.
The aisle said organic.
The marketing said healthy.

You responded to the information you were given.
The information was incomplete.
And the incompleteness was not accidental.

🌿 What You Can Do — Practically and Without Overwhelm

Read ingredient labels for rice syrup. Brown rice syrup, organic brown rice syrup, and rice syrup are all the same ingredient. When you see them in bars, cereals, infant foods, or natural candy — know what they may carry.

Vary your grains. If rice is a staple in your diet, diversifying to other whole grains — quinoa, millet, oats, buckwheat — reduces your ongoing arsenic exposure from this single concentrated source.

Reduce ultra-processed foods broadly. The more processed a food is — regardless of what its label claims — the more opportunities for heavy metal contamination exist in its production and processing pipeline.

Support your body's detoxification capacity daily. Cruciferous vegetables support Phase 2 liver detox. Selenium-rich foods — Brazil nuts, sunflower seeds — support mercury excretion. Cilantro has been studied for supporting heavy metal mobilization. Diverse fiber supports elimination through the gut. These are not dramatic interventions. They are consistent, daily support for the system your body has always used to manage its chemical burden.
